Kickin' Kale Salad
Spicy, savory and sweet, this raw kale salad hits the spot!

Ingredients:
(Serves 2)
• 1 bunch organic kale
• ½ cup organic cooked chickpeas
• 1/3 small sweet onion, thinly sliced
• 1/3 cup raisins
• 1/3 cup organic sesame tahini
• 1/2 cup lemon juice
• pinch of cayenne, or paprika for less heat
• 1 tsp Himalayan salt

Instructions:
• Wash kale, strip leaves from center rib, and tear into thin strips. Place prepared kale in a large bowl with raisins, chickpeas, and thinly sliced onion.
• Whisk remaining ingredients in a separate bowl. If tahini is too thick, try adding 1-2 tbsp of warm water.
• Pour dressing into the bowl of kale, using your hands to massage it into the leaves. Serve and enjoy!
