Ingredients
• 1/2 jalapeño chili, seeded and minced
• Juice of 2 limes
• 1/4 cup olive oil
• 1/2 tsp. coarse sea salt
• Freshly ground pepper, to taste
• 1 mango
• 1 avocado
• 6 cups organic mixed salad greens
Directions
To make the vinaigrette, combine the jalapeño and lime juice in a small bowl. Whisk in the olive oil. Season with salt and pepper. Set aside until ready to serve.
Cube flesh of avocado and mango. Toss salad greens, avocado, mango, and vinaigrette.
Makes 4 servings.
